Our early harvest virgin olive oil comes from the varieties ''Adramitini'' and ''Ladolia'' all from the Greek island of Lesvos. Its characteristic taste is fruity and picantic due to the unripe condition of the fruit at the time of the pressing and these two characteristics are the main reason for its high popularity. You only have to taste it raw in order to appreciate these characteristics.

The early harvest virgin olive oil or first oil or non-mature oil is the product of the first harvested olives when they are still raw and green. It is always produced at the beginning of the harvest in October in limited quantities as farmers prefer to keep it for themselves. An other reason for its rarity is the fact that the yield of the first harvest compared to the yield of the mature olives is almost half. During the extraction of the first olive oil, there is no filtering, while due to the high quantity of chlorophyll it contains, its color is light green. The early harvest virgin olive oil is rich in polyphenols, which are antioxidants, and this is the reason for its strong taste. This feature weakens with time and therefore is best to consume it when is fresh. Compared to the ordinary olive oil the early harvested one is higher in antioxidant properties and lower in acidity.
