Semolina cake (samali)

About 24 pieces

For the cake:
• 3 & 1/2 cups coarse semolina
• 3 cups sugar
• 3 tsp baking powder
• 1 & 1/2 cups milk
• zest of 1 lemon
• zest of 1 orange
• a little olive oil
• a little flour

For the syrup:
• 4 cups water
• 1 & 1/2 cups sugar
• 1/2 orange
• 1/2 cup honey

1. Combine all the cake ingredients and mix well.
2. Preheat the oven to 140 °C.
3. Oil a baking pan, dust lightly with flour. Pour in the cake mixture and leave to rest for 30’.
4. Bake at 140 °C for about 60’ until golden and a crust forms. Remove from oven and leave to cool.
5. Prepare the syrup by boiling the water, sugar and orange together until it thickens. Towards the end remove the orange and add the honey, stirring well.
6. Pour the warm syrup over the cold cake in the baking pan. Leave until the syrup is absorbed, then cut the cake while still in the pan.
